G de Chateau Giraud

Located in the heart of the Sauternes region, Chateau Giraud sits on approximately 128 hectares, roughly split between Sémillon and Sauvignon Blanc production. The G de Giraud is a dry white Bordeaux wine from the producer-a blend of equal parts Sémillon and Sauvignon Blanc, fermented in both barrel and stainless steel. Expect aromas of grapefruit and passion fruit, with the slightest hint of fresh mint. The palate features the freshness of the Sauvignon Blanc, but quickly develops the nuanced brioche notes from the Sémillon. Should drink well alongside any of the dishes.

Haut-Médoc Giscours

Château Giscours is located within the Margaux appellation of Bordeaux's left bank. While the wines from this Chateau are typically reflective of the typical style of the area (think full-bodied fruit flavors, black currant, crushed violet and cocoa), their Haut-Médoc Giscours wine is lighter and more youthful. It is an equal parts blend of Merlot and Cabernet Sauvignon, and the warmth of the 2020 vintage in the Haut-Médoc results in a full-bodied wine with ripe fruits, leather, and baking spice. Should pair well alongside the shortrib.

2009 Chateau Guiraud Sauternes

Whether you are indulging in the optional dessert course/optional foie gras or not, you can't have Bordeaux without a small glass of Sauternes to end your meal. This Sauternes (coming from the same Chateau as the first dry white wine) is made from a blend of Sémillon and Sauvignon Blanc grapes that have been affected by botrytis, resulting in a rich, lusciously sweet dessert wine. The 15 years of age on this wine should be starting to show as well, resulting in honeyed caramel and roasted nut notes. It should pair well with the foie terrine, the cheese, the dessert, or simply as itself at the end of the meal.

2018 Chateau Perron Lalande-de-Pomerol 

Established in the mid-1600’s by the then owner of Haut Brion, the grounds of this château have been in the Massonie family for three generations. Many of the vines are 60 years old. This is a classic, Merlot dominated blend from Lalande-de-Pomerol. Rich, powerful and many-layered nose of red fruits, dark spice, fresh oak and cocoa. Supple, velvety palate with fine, crisply elegant tannins.
