Made in the region of Chablis, France, this washed rind cheese was recently “created” in the 20th century, as the practice of refining and producing cheeses became more popular. (Affine means to refine.)
how it’s made
L’Affiné au Chablis is made from pasteurized cow’s milk. The cheese is washed once a week with Chablis and matures for 1-2 months. Chablis is a white wine from Burgundy made with 100% Chardonnay grapes. The dry, light bodied wine gives the cheese floral, citrus, and mineral notes. Like many washed rind cheeses, it has a strong aroma but isn’t as potent as its cousin, Epoisses.
to serve
Bring to room temperature at least an hour before serving. Serve with crackers, preserves, honey, and a glass of Chablis.
